ACCOUNTABILITY OBJECTIVE:
Provides strategic leadership and support for all food and beverage/culinary/dining services operations to individual residences across Ontario. The position ensures the food and beverage/culinary/dining services operations meet resident needs, ensures team member satisfaction, and focuses on growing revenues. Implements strategies company-wide goals to enhance food and beverage/culinary/dining services to a standard that improves our ability to compete in the market.
BACKGROUND QUALIFICATIONS:
A minimum of at least 10 years’ experience in food and beverage/culinary/dining services in the retirement/hotel/commercial and/or restaurant industry. Possess overall knowledge of food and beverage/culinary/dining services preparation and presentation. Experience at the Executive Chef/Commercial Operations management level is an asset. Red Seal or equivalent qualifications required. Knowledge of principles and processes for providing customer and personal services, which includes customer needs analysis, assessment, and evaluation of meeting quality service standards and services.
KEY RESPONIBILITIES:
Acts as a resource to the vice president operations, regional managers, administrators/general managers, and dining service managers in the development of programs to achieve food and beverages goals and objectives that are consistent with the corporate direction.
Keeps the Vice President, Operations – Ontario, Area Managers, General Managers, and Dining Service Managers informed regarding new information, new programs and approaches, food products, preparation and delivery systems and training initiatives.
Creation and implementation of the menu process including menu costing, recipes, product guidelines and specifications/selections.
Makes recommendations regarding appropriate equipment purchases, departmental supplies and purchasing specifications for food products in consultation with the consultant nutrition and food services (CNFS).
Participates in annual capital budget planning process.
Develops a la carte menus with the chefs to ensure resident satisfaction and choice is achieved.
Sets expectations and holds food and beverage leadership teams accountable for demonstrating desired service standards.
Responsible for the evaluation and reporting of the roll out process of the new food & beverage initiative.
Provides input into the Verve Quality Improvement programs (VQI) and develops VQI tools and procedures related to food and beverage programs.
Consults with CNFS on the development of policies and procedures and standards regarding food and beverage for all retirement residences’ manuals.
Establishes challenging, realistic, and obtainable goals to guide the operation and performance that strives to improve service performance in all residences.
Establishes and maintains open, collaborative relationships and utilizes interpersonal and communication skills to lead, influence and encourage others.
Coaches and supports food and beverage leadership teams to effectively manage wages, food and beverage costs, control expenses and identify opportunities for increases in revenue generation or exploring new business opportunities.
Remains informed of market trends and introduces new food and beverage products to meet or exceed customer expectations, generate increased revenue, and ensure a competitive position in the market.
Improves service by communicating and assisting individuals to understand customer needs, provide guidance, feedback and individual coaching when needed.
Develops and provides training programs for food and beverage service delivery appropriate to all team members.
Provides input into the development of food and beverage service job descriptions, job routines, and staffing patterns.
Maintains effective communication and interpersonal relationships with all levels.
Co-chairs regional food service committee.
General
Complies with the Occupational Health and Safety Act, Workplace Safety and Insurance Act, and Workplace Hazardous Material Information System. This includes recognizing health and safety hazards, reporting incidents, fulfilling responsibilities under the applicable legislation, as well as participating in in-services and fire drills.
Complies with all corporate policies and procedures.
Completes all required mandatory training/education.
Other duties as assigned.
Travel & Work Schedules
A high degree of flexibility is required in scheduling activities and priorities and it is anticipated that the majority of time will be spent away from Corporate office.
Must possess a current, valid, G-Class Ontario driver’s license and be willing to travel using own personal vehicle, with some overnight travel required.
